Method
 

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat. Toss in the diced onions, sliced carrots, and celery. Sauté until softened, around 5-7 minutes.
  2. Add the chopped cabbage and stir. Cook for a few minutes until it begins to wilt slightly.
  3. Stir in the diced tomatoes and vegetable broth. Sprinkle in the garlic powder, salt, pepper, oregano, paprika, and drop in the bay leaf.
Cooking
  1. Bring the pot to a gentle boil. Once bubbling, reduce the heat and let it simmer for 30-40 minutes.
  2. Remove the bay leaf before serving. Ladle the soup into bowls and enjoy!

Notes

Chop veggies evenly for consistent cooking. Adjust seasoning to your taste and consider adding beans or lentils for protein if desired.
