  • 4 cups cubed, seedless watermelon (fresh or frozen)
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 tablespoons honey or agave syrup adjust to taste
  • 1 cup sparkling water optional for fizz
  • Fresh mint leaves for garnish

Preparation
  1. Start by cutting the watermelon into cubes. If using frozen watermelon, allow it to thaw slightly for easier blending.
  2. In a blender, combine the watermelon cubes, lime juice, and honey. Blend on high for about 30-60 seconds until it reaches a smooth consistency. For a chunky texture, blend for a shorter duration.
  3. If you'd like some sparkle, slowly pour in the sparkling water and pulse a few times to mix.
  4. Taste and adjust sweetness by adding more honey, if necessary. Blend again to incorporate.
  5. Pour into glasses filled with ice and let them chill for 5-10 minutes. Garnish each glass with fresh mint leaves before serving.

Notes

Serve in clear glasses to showcase the vibrant pink. Rim glasses with lime juice and dip them in sugar or salt for a zesty surprise. Store leftovers in an airtight container in the refrigerator for up to 3 days.
