Preparation
- Divide the ground beef into 10 equal balls. Sprinkle salt, pepper, and garlic powder on top of each ball.
- In a hot cast iron skillet with a splash of oil, add the sliced onions and let them caramelize.
Cooking
- Place a beef ball in the skillet with the seasoned side facing down. Press it flat with a spatula using parchment paper.
- Cook on high heat for exactly 3 minutes. Flip and add a slice of American cheese. Grill for an additional minute.
Sauce Preparation
- Combine mayo, ketchup, mustard, relish, capers, and pickle juice in a bowl. Mix until smooth.
Assembly
- Toast the brioche buns, spread the secret sauce, layer on lettuce, and top with the smash burger patties, pickles, and pepperoncini.
- Drizzle more sauce on top and crown with the other half of the bun.
Notes
Use cold meat for best results, don’t overwork the beef, and let burgers rest after cooking.
