Dough and Base
  • 1 batch vegan pizza dough Can be store-bought or homemade.
Filling
  • 1 large onion, caramelized Caramelize for at least 20 minutes for the best flavor.
  • 2 cups fresh spinach, sautéed with garlic Sauté until tender for vibrant flavor.
  • 1 cup marinara sauce Use good-quality marinara for the best results.
  • to taste salt and pepper Essential for enhancing all flavors.
Topping
  • to taste olive oil for brushing Gives a golden finish to the rolls.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Dust your countertop lightly with flour and roll out the vegan pizza dough into a rectangle shape.
  3. Spread caramelized onions evenly over the dough.
  4. Add sautéed spinach evenly on top of the onions.
  5. Drizzle marinara sauce over the spinach.
  6. Carefully roll the dough tightly into a log.
  7. Slice the log into individual rolls, ideally about 1 inch thick.
  8. Place rolls on a baking sheet lined with parchment paper.
  9. Brush the tops with olive oil and sprinkle with salt and pepper.
Baking
  1. Bake the rolls in the preheated oven for about 20-25 minutes or until golden brown.
  2. Serve warm with extra marinara on the side for dipping.

Notes

For extra flavor, consider adding Italian herbs. The rolls can be frozen for up to a month, and leftovers make great breakfast options with avocado or in a veggie scramble.
