Ingredients
  

Burger Patties
  • 6 oz ground beef (80/20 blend) 3 oz per patty
  • salt to taste
  • black pepper to taste
Buns & Toppings
  • 2 soft burger buns potato or brioche
  • 2 slices American cheese or cheddar
  • 1 tbsp butter for toasting buns
  • pickles optional
  • onion sliced, optional
  • lettuce optional
  • tomato sliced, optional
  • burger sauce e.g., mayo, ketchup, mustard mix

Equipment

  • Skillet or Griddle
  • Spatula or Burger Press

Method
 

  1. Heat a skillet over medium heat. Add butter and toast the buns cut-side down until golden. Set aside.
  2. Form 3 oz loose beef balls (2 per burger). Don’t overwork the meat. Keep chilled until cooking.
  3. Heat the skillet to high. Place a beef ball on the skillet and immediately smash flat using a spatula or press. Hold for 10 seconds. Season with salt and pepper.
  4. After 1.5–2 minutes, flip the patty, add cheese, and cook for 1 minute more until cheese melts.
  5. Stack two patties, place on a toasted bun with your favorite toppings and burger sauce. Serve hot.

Notes

Use parchment paper to prevent sticking when smashing. A hot, dry skillet gives the best crust. Customize with your favorite toppings or sauces.
