  • 4 cups broccoli florets
  • 1 cup almonds, sliced Look for sliced almonds in the baking aisle.
  • 1 cup bacon, cooked and crumbled Substitute for turkey bacon or omit for a vegetarian option.
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
Dressing Ingredients
  • 1/2 cup mayonnaise You can use seasoned Greek yogurt for extra zing.
  • 1/4 cup Greek yogurt
  • 2 tablespoons poppy seeds
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the broccoli florets, sliced almonds, crumbled bacon, sunflower seeds, and dried cranberries. Mix together until evenly distributed.
  2. In a separate bowl, whisk together the mayonnaise, Greek yogurt, poppy seeds, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the broccoli mixture and toss gently until all ingredients are coated.
  4. Chill in the refrigerator for at least 1 hour before serving.

Notes

Store leftovers in an airtight container. Maximum freshness lasts up to 3 days. Freezing is not recommended due to mayonnaise and yogurt.
