  • 1 lb Italian sausage Use sweet or spicy based on preference.
  • 2 cans white beans Rinsed and drained if using canned.
  • 4 cups spinach Fresh, can be adjusted to taste.
  • 2 medium carrots Diced.
  • 2 stalks celery Diced.
  • 1 medium onion Chopped.
  • 3 cloves garlic Minced.
  • 4 cups vegetable broth Low-sodium recommended.
  • 2 tablespoons olive oil For sautéing.
  • 2 teaspoons Italian herbs Dried thyme and oregano.
  • to taste salt Adjust according to preference.
  • to taste pepper Adjust according to preference.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté until softened.
  3. Stir in minced garlic and Italian sausage. Cook until the sausage is browned.
  4. Add white beans, vegetable broth, dried herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Stir in fresh spinach and cook until wilted.
  7. Adjust seasoning if needed and serve hot.

Notes

For a thicker soup, mash some of the white beans in the pot before serving. Feel free to add more vegetables like bell peppers or zucchini for added nutrients. Use low-sodium vegetable broth to control the salt content.
