- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery. Sauté until softened.
- Stir in minced garlic and Italian sausage. Cook until the sausage is browned.
- Add white beans, vegetable broth, dried herbs, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Stir in fresh spinach and cook until wilted.
- Adjust seasoning if needed and serve hot.
Notes
For a thicker soup, mash some of the white beans in the pot before serving. Feel free to add more vegetables like bell peppers or zucchini for added nutrients. Use low-sodium vegetable broth to control the salt content.
