Turkey Roulade with Sausage Stuffing

Ingredients
  

Turkey Preparation
  • 1 pound skinless boneless turkey breast Ensure it's deboned.
  • 6 tablespoons unsalted butter Melting some for rub.
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
Stuffing Ingredients
  • 0.5 pound Italian sausage Bulk sausage recommended.
  • 0.5 cup yellow onion Finely diced.
  • 0.5 cup celery Finely diced.
  • 1 cup chicken broth Plus more as needed.
  • 1 box herb stuffing mix 6 ounces.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lay the turkey breast flat and pound it out gently with a meat mallet until it is even in thickness.
Make the Stuffing
  1. In a skillet, melt 2 tablespoons of butter over medium heat. Add the sausage, onion, and celery. Cook until the sausage is browned and the vegetables are soft. Remove from heat.
Combine Ingredients
  1. In a bowl, mix the sausage mixture with the herb stuffing mix. Add chicken broth until the mixture is moist but not soggy.
Season the Turkey
  1. Rub the remaining melted butter over the turkey. Sprinkle salt, pepper, and garlic powder evenly on the turkey.
Stuff the Turkey
  1. Carefully spread the stuffing mixture over the turkey, leaving a small border at the edges.
Roll It Up
  1. Starting from one end, roll the turkey tightly. Use kitchen twine to tie the roulade every few inches to keep it together.
Prepare for Baking
  1. Place the turkey seam-side down on a baking dish. (You can add additional broth to the dish for moisture.)
Bake
  1. Cover the roulade with foil and bake for about 1 hour. Remove the foil and bake for an additional 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
Rest and Slice
  1. Let the turkey rest for 10 minutes before slicing. This will help keep it juicy.

Notes

Ensure the turkey is pounded evenly for uniform cooking. Don't overstuff the turkey to prevent it from bursting during cooking. Feel free to customize the stuffing with herbs or other vegetables you enjoy.
