Ingredients
  

For the Garlic Sauce

  • 1/3 cup soy sauce This adds a umami punch—go for low-sodium if you prefer a lighter taste.
  • 1 tablespoon nutritional yeast It brings a cheesy, nutty flavor, making it perfect for plant-based dishes!
  • 1 tablespoon toasted sesame oil A little goes a long way—this oil adds a warm, nutty aroma that is simply irresistible.
  • 1 teaspoon onion powder This elevates the savory profile; it's often a secret weapon in flavorful cooking!
For the Noodles
  • 260 grams fresh noodles Use whatever type you like—rice noodles or egg noodles work beautifully.
  • Scallions (chopped for garnish) They provide a fresh crunch and lovely color contrast to your dish!
  • Black pepper (for garnish) A sprinkle of freshly cracked black pepper elevates the flavor dramatically!

Method
 

Make the Triple Garlic Sauce
  1. Set aside a clove's worth of minced garlic. In a frying pan, with about half of the vegetable oil, gently fry the rest of the garlic over medium-low heat until it turns a light brown color without burning. Once done, let it cool.
Blend All the Goodness Together
  1. In a blender or food processor, combine the remaining oil, black garlic, soy sauce, nutritional yeast, toasted sesame oil, and onion powder. Add the cooled fried garlic and blend until smooth.
Cook the Noodles
  1. Cook the fresh noodles according to the package instructions until tender but still firm. Transfer them to a large mixing bowl, retaining some of the boiling water.
Bring It All Together
  1. Stir generous spoonfuls of Triple Garlic Sauce over the noodles, adding a ladleful of reserved boiling water to help the sauce cling. Toss everything together, adding more sauce or boiling water as needed.
Serve & Garnish
  1. Platter the noodles in a bowl and sprinkle with chopped scallions and a crack of black pepper. Enjoy!

Notes

Leftover noodles can be stir-fried with soy sauce and added veggies for a quick meal. The sauce can be made ahead and stored for up to a month in the freezer. Always taste and adjust seasoning as needed.
