  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened Use room temperature butter for better creaming.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon zest of lemon
Glaze Ingredients
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg, vanilla extract, and lemon zest, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, stirring until a soft dough forms.
  5. Roll the dough into small balls (about 1 inch in diameter) or shape as desired, placing them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until lightly golden.
  2. While the cookies cool, prepare the glaze by mixing the powdered sugar and lemon juice until smooth.
  3. Once the cookies are completely cooled, drizzle the glaze over them.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. To freeze, place in a single layer separated by parchment paper for up to 3 months and thaw at room temperature.
