Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
- Add the egg, vanilla extract, and lemon zest, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the creamed mixture, stirring until a soft dough forms.
- Roll the dough into small balls (about 1 inch in diameter) or shape as desired, placing them on a baking sheet lined with parchment paper.
Baking
- Bake for 10-12 minutes or until lightly golden.
- While the cookies cool, prepare the glaze by mixing the powdered sugar and lemon juice until smooth.
- Once the cookies are completely cooled, drizzle the glaze over them.
Notes
Store cookies in an airtight container at room temperature for up to 1 week. To freeze, place in a single layer separated by parchment paper for up to 3 months and thaw at room temperature.
