  • 4 large flour tortillas Soft and pliable, the perfect base for the filling.
  • 1 cup shredded mozzarella cheese Opt for whole milk mozzarella for creaminess.
  • 1/2 cup pizza sauce Choose your favorite jar or make your own.
  • 1/2 cup mini pepperoni or other toppings Feel free to use veggies, cheese, or leftover meats.
  • 1/4 cup grated Parmesan cheese Adds a lovely nutty flavor.
  • as needed olive oil or cooking spray Helps achieve a golden, crispy finish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lay one tortilla flat on your counter. Spread a layer of pizza sauce over it, leaving a little border around the edges.
  3. Sprinkle mozzarella cheese generously over the sauce.
  4. Scatter mini pepperoni or your chosen toppings across the cheese.
  5. Starting at one end, roll the tortilla tightly to form a log.
  6. Repeat the process with the remaining tortillas.
Baking
  1. Place the rolls seam-side down on a baking sheet. Brush each with olive oil or spray with cooking spray.
  2. Bake for 15-20 minutes, until golden and the cheese is melted.
  3. Allow to cool slightly before slicing into bite-sized pieces.
Serving
  1. Serve warm with extra pizza sauce for dipping.

Notes

Make it a family affair by inviting kids to help spread the sauce and choose toppings. Avoid overstuffing rolls to prevent bursting. Experiment with spices for extra flavor.
