For the Toast
  • 4 slices bread Use your favorite type of bread, like crusty white or whole grain.
  • 2 tablespoons butter Soft, room-temperature butter for easier spreading.
For the Filling
  • 2 tablespoons chili mayonnaise Mix mayo with chili sauce or sriracha for a homemade version.
  • 1 cup cheddar cheese, grated Freshly grated for enhanced flavor.
  • 1 cup mozzarella cheese, sliced Fresh mozzarella for a gourmet touch.
  • 4 slices ham Use smoked ham for added flavor.

Method
 

Preparation
  1. Spread a generous layer of butter on one side of each slice of bread.
  2. On the unbuttered side, slather on the spicy chili mayo.
Assembly
  1. Layer cheddar cheese and slices of ham on one slice of bread.
  2. Top with mozzarella cheese.
  3. Place another slice of bread on top, buttered side facing out.
Cooking
  1. Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes until golden brown and cheese starts to melt.
  2. Flip to the other side and repeat until golden brown.
Serving
  1. Remove from heat, slice, and serve warm.

Notes

Use a heavy skillet for even toasting. Consider adding spices like smoked paprika. Sandwiches can be prepped ahead and refrigerated.
