Preparation
- Spread a generous layer of butter on one side of each slice of bread.
- On the unbuttered side, slather on the spicy chili mayo.
Assembly
- Layer cheddar cheese and slices of ham on one slice of bread.
- Top with mozzarella cheese.
- Place another slice of bread on top, buttered side facing out.
Cooking
- Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes until golden brown and cheese starts to melt.
- Flip to the other side and repeat until golden brown.
Serving
- Remove from heat, slice, and serve warm.
Notes
Use a heavy skillet for even toasting. Consider adding spices like smoked paprika. Sandwiches can be prepped ahead and refrigerated.
