Tilapia in Roasted Pepper Sauce

Ingredients
  

For the Fish
  • 4 fillets Tilapia can be swapped with cod or haddock
  • 2 tablespoons Olive Oil avocado oil can be used as a substitute
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 2 medium Red Bell Peppers can use yellow or orange for a twist
  • 3 cloves Garlic fresh recommended
  • 2 tablespoons Lemon Juice white vinegar can be used as a substitute

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the red bell peppers into quarters and remove the seeds. Toss them with 1 tablespoon of olive oil, a sprinkle of salt, and pepper. Spread them on a baking sheet lined with parchment paper.
  3. Roast in the oven for 20-25 minutes, or until soft and slightly charred.
Cooking
  1. While the peppers are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add minced fresh garlic and sauté for 1-2 minutes until aromatic.
  2. Transfer the roasted peppers to a blender along with sautéed garlic, lemon juice, and a pinch of salt and pepper. Blend until smooth, adjusting with water if necessary.
  3. Season the tilapia fillets with salt and pepper. In the same skillet, sear the fillets for 3-4 minutes on each side until golden and cooked through.
  4. Pour the sauce over the cooked tilapia and let it simmer for 2-3 minutes before serving.

Notes

Serve hot and pair with a crisp salad or couscous. Store leftovers in an airtight container in the fridge for up to 3 days.
