Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, stir together flour, baking soda, and baking powder until evenly combined.
  3. In a large bowl, cream together the butter and sugar until smooth and fluffy (about 2-3 minutes).
  4. Beat in the egg, followed by the vanilla and almond extracts until the mixture is smooth.
  5. Gradually blend in the dry ingredients, mixing just until combined.
  6. Divide the dough into portions, and mix in food coloring to create different shades.
  7. Roll the dough into balls, flattening them slightly on a floured surface.
  8. Use a toothpick or skewer to create a tie-dye effect by swirling colors together.
Baking
  1. Place the cookies on ungreased baking sheets and bake for 8 to 10 minutes until golden at the edges.
  2. Allow the cookies to cool before decorating with royal icing.

Notes

For best results, serve at room temperature and store in an airtight container for up to five days.
