- Cut the hard-boiled eggs in half and gently remove the yolks.
- In a bowl, mash the egg yolks with mayonnaise, mustard, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Top each deviled egg with a fresh sage leaf and a sprinkle of thyme.
- Chill until ready to serve.
Notes
You can prepare the deviled eggs up to a day in advance. They’ll stay delicious for about 2 days in the fridge. Avoid freezing them, as they lose texture and flavor when thawed.
