  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon chili flakes optional

Preparation
  1. Slice the cucumbers and place them in a large bowl.
  2. Add the red onion and cilantro.
  3. In a separate bowl, whisk together rice vinegar, sugar, soy sauce, sesame oil, chili flakes, salt, and pepper.
  4. Pour the dressing over the cucumber mixture and toss until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days, but consume fresh for best texture. Adjust sweetness by varying sugar levels. For spice, increase chili flakes. Consider toppings like chopped peanuts for added flavor.
