- In a large bowl, combine the cooked chicken, corn, cooked rice or quinoa, diced bell pepper, red onion, and avocado.
- Squeeze lime juice over the mixture and toss to combine.
- Season with salt and pepper to taste.
- Divide the mixture into serving bowls, top with chopped cilantro, and add a dollop of sour cream or Greek yogurt if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze the mixture without toppings. Thaw in the fridge overnight and reheat before serving.
