  • 2 cups cooked chicken, shredded Rotisserie chicken works great!
  • 2 cups corn (fresh, frozen, or canned) Fresh corn adds a nice crunch.
  • 1 cup cooked rice or quinoa Ensure the rice or quinoa is gluten-free if needed.
  • 1 piece bell pepper, diced
  • 1/2 cup red onion, diced
  • 1 piece avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 piece lime, juiced Lemon juice can be used as a substitute.
  • Salt and pepper to taste
  • Sour cream or Greek yogurt (optional, for serving)

Method
 

Preparation
  1. In a large bowl, combine the cooked chicken, corn, cooked rice or quinoa, diced bell pepper, red onion, and avocado.
  2. Squeeze lime juice over the mixture and toss to combine.
  3. Season with salt and pepper to taste.
  4. Divide the mixture into serving bowls, top with chopped cilantro, and add a dollop of sour cream or Greek yogurt if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze the mixture without toppings. Thaw in the fridge overnight and reheat before serving.
