- In a skillet over medium heat, add your ground beef or turkey until browned. Drain excess fat.
- Stir in diced tomatoes, corn, bell peppers, red onion, and taco seasoning. Simmer until veggies soften.
- In serving bowls, place a generous scoop of cooked rice at the bottom.
- Spoon the meat and vegetable mixture over the rice.
- Sprinkle shredded cheese on top and add sliced avocado and cilantro.
- Serve warm with a dollop of sour cream if desired.
Notes
You can prepare the meat and veggie mixture a day in advance. For best reheating, use the stove with a splash of water or broth.
