Toppings

Method
 

Cooking
  1. In a skillet over medium heat, add your ground beef or turkey until browned. Drain excess fat.
  2. Stir in diced tomatoes, corn, bell peppers, red onion, and taco seasoning. Simmer until veggies soften.
  3. In serving bowls, place a generous scoop of cooked rice at the bottom.
  4. Spoon the meat and vegetable mixture over the rice.
  5. Sprinkle shredded cheese on top and add sliced avocado and cilantro.
  6. Serve warm with a dollop of sour cream if desired.

Notes

You can prepare the meat and veggie mixture a day in advance. For best reheating, use the stove with a splash of water or broth.
