Ingredients
  

Pasta and Base Ingredients
  • 8 oz pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 15 oz canned black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 each red bell pepper, diced
  • 1 each avocado, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup cilantro, chopped
Dressing Ingredients
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1/4 cup lime juice
  • to taste Salt and pepper

Method
 

Pasta Preparation
  1. Cook the pasta according to package instructions, usually for about 7-9 minutes, until it’s tender but still firm (al dente). Drain and rinse under cold water to stop the cooking process.
Salad Assembly
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, black beans, corn, red bell pepper, avocado, red onion, and cilantro.
  2. In a separate bowl, whisk together the taco seasoning, salsa, and lime juice until well blended.
  3. Pour the dressing over the pasta salad and gently toss to combine all the ingredients.
  4. Season with salt and pepper to taste.
Serving Suggestions
  1. Serve chilled as a side dish or main course, garnished with additional cilantro or lime wedges.

Notes

Best enjoyed chilled. Can be prepared a day in advance for enhanced flavor.
