Pasta Preparation
- Cook the pasta according to package instructions, usually for about 7-9 minutes, until it’s tender but still firm (al dente). Drain and rinse under cold water to stop the cooking process.
Salad Assembly
- In a large bowl, combine the cooked pasta, cherry tomatoes, black beans, corn, red bell pepper, avocado, red onion, and cilantro.
- In a separate bowl, whisk together the taco seasoning, salsa, and lime juice until well blended.
- Pour the dressing over the pasta salad and gently toss to combine all the ingredients.
- Season with salt and pepper to taste.
Serving Suggestions
- Serve chilled as a side dish or main course, garnished with additional cilantro or lime wedges.
Notes
Best enjoyed chilled. Can be prepared a day in advance for enhanced flavor.
