  • 1 lb Chicken thighs Boneless, skinless recommended
  • 2 cups Rice Use white or brown rice
  • 1/2 cup Sweet chili sauce Adjust sweetness to taste
  • 1/4 cup Soy sauce Use gluten-free alternative if needed
  • 3 cloves Garlic Minced
  • 2 stalks Green onions Sliced for garnish
  • 2 tbsp Vegetable oil For cooking
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a skillet, heat vegetable oil over medium heat.
  3. Season chicken thighs with salt and pepper, then add to the skillet.
Cooking
  1. Cook the chicken until browned and cooked through, about 5-7 minutes per side.
  2. In a small bowl, combine sweet chili sauce, soy sauce, and minced garlic.
  3. Pour the sauce over the cooked chicken and let simmer for a few minutes.
Serving
  1. Serve the chicken over the rice, garnished with sliced green onions.
  2. For extra crunch, add some chopped nuts or sesame seeds on top when serving.

Notes

If stored, keep in an airtight container for up to 3-4 days. Reheat in a microwave or skillet. Use tofu for a vegetarian option.
