Preparation
- Preheat the oven to 350 degrees and line or spray 2 small bread loaf pans.
- In a large bowl, smash the bananas with a fork until they are smooth.
- Add the cake mix and eggs to the bananas; mix well until combined.
- Evenly distribute the cake batter into the prepared loaf pans. If desired, top with chocolate chips or other mix-ins.
Baking
- Bake for 25-35 minutes, or until a toothpick comes out clean when inserted into the bread.
Notes
This banana bread is delicious warm or at room temperature. You can slice it plain or spread butter or cream cheese on top for extra flavor. It's also great with coffee or tea. Store it wrapped in plastic or aluminum foil at room temperature for a few days or refrigerate/freezer for longer shelf life. For added flavor, incorporate cinnamon or nuts.
