  • 32 ounces fresh or frozen strawberries Choose ripe strawberries for the best flavor.
  • 1/4 teaspoon salt
  • 4 ounces water
  • 1 Tablespoon fresh lemon juice Adjust based on your taste preference.
  • 1 teaspoon lemon zest Adjust based on your taste preference.
  • 2 Tablespoons ClearJel or 1 Tablespoon Cornstarch Used for thickening the topping.
  • 1 ounce cool water for the ClearJel or Cornstarch

Method
 

Cooking the Mixture
  1. Combine half of the strawberries, water, salt, lemon juice, and lemon zest in a large saucepan. Bring to a simmer over medium-high heat, stirring occasionally.
  2. Simmer the mixture for 5-10 minutes until it thickens and reduces by about one-third.
  3. Use a whisk or a fork to crush the strawberries, creating a sauce consistency.
  4. In a separate cup, mix the ClearJel or cornstarch with cool water to create a slurry.
  5. Add the slurry to the simmering strawberry mixture. Cook for 1 minute while stirring until thickened.
  6. Stir in the remaining strawberries and remove from heat.

Notes

To store your homemade strawberry topping, let it cool completely. Transfer it to an airtight container and refrigerate it. It can last for about one week, or be frozen for up to six months. Thaw in the refrigerator before using. For added sweetness, include sugar or honey if desired. You can blend all strawberries for a smoother topping.
