  • 4 cups fresh spinach
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 3/4 cup feta cheese, crumbled
  • 1/2 cup red onions, thinly sliced
  • 1/2 cup toasted pecans Toast in a dry skillet over medium heat for about 5 minutes.
Dressing
  • 1/3 cup balsamic dressing Homemade is preferred.

  1. In a large bowl, combine 4 cups of fresh spinach, 1 cup of sliced strawberries, 1 cup of blueberries, 3/4 cup of crumbled feta cheese, 1/2 cup of thinly sliced red onions, and 1/2 cup of toasted pecans. Mix gently to avoid crushing the berries.
  2. Drizzle the salad with 1/3 cup of homemade balsamic dressing. Toss gently to combine all ingredients without bruising the delicate fruits.
  3. Serve immediately for the freshest taste, or chill in the fridge for about 15-20 minutes to allow the flavors to meld before serving.

Notes

Serve chilled or at room temperature. Pair with grilled chicken or shrimp for a complete meal. Garnish with extra feta crumbles, thinly sliced radishes, or fresh mint leaves.
