Ingredients
  

For the crust
  • 2 packages 8-ounce packages cream cheese Softened
  • 2 packages graham crackers (about 18-20 full crackers) Crushed
  • 1/2 cup butter Melted
For the filling
  • 8 oz tub cool whip
  • 1 cup white chips Melted
  • 1/2 cup chopped strawberries Fresh
For the cake
  • 1 box strawberry cake mix Oil, eggs, and water needed to prepare
For the frosting
  • 2 packages 8-ounce packages of cream cheese Softened
  • 8 cups powdered sugar
  • 1 cup butter
  • 2 tablespoons vanilla
For decoration
  • 1 package 10.6 oz white wafer cookies (strawberry or vanilla) Crumble for topping
  • Reserved cake tops crumbled

Method
 

Preparing the crust
  1. Crush the graham crackers and mix them with melted butter.
  2. Press the mixture into a lined springform pan and refrigerate.
Making the filling
  1. Beat the cream cheese with the cool whip until creamy.
  2. Melt the white chips and mix them into the cream cheese mixture.
  3. Pour this mixture over the crust and top with chopped strawberries.
  4. Refrigerate to set.
Preparing the cake
  1. Prepare the strawberry cake according to package instructions and let it cool.
  2. Trim the tops for crumbling later.
Making the frosting
  1. Combine the softened cream cheese, powdered sugar, butter, and vanilla.
  2. Beat until smooth and optionally add red food coloring.
Assembling the cheesecake
  1. Frost the first cake layer, place the cheesecake on top, then add the second cake layer.
  2. Frost with the colored frosting and press in the crumbles.
  3. Use reserved frosting for decoration and place a strawberry in each swirl before serving.

Notes

Keep the cheesecake refrigerated. For more intense strawberry flavor, use fresh strawberries in the filling and topping. Ensure cream cheese is at room temperature for a smooth filling. Adjust food coloring for desired frosting shade.
