  • 1/4 cup olive oil Ensure it's at room temperature for easier blending.
  • 1 tablespoon honey or maple syrup Use maple syrup for a vegan alternative.
  • Salt and pepper to taste Add more to adjust flavor.

Preparation
  1. In a blender, combine the strawberries, balsamic vinegar, honey, salt, and pepper. Blend until smooth, about 30 seconds.
  2. While the blender is running, slowly add the olive oil until the dressing is emulsified and creamy, taking about 1 minute.
  3. Taste and adjust the seasoning if needed, adding more salt, pepper, or honey to achieve the desired flavor.
  4. Serve over your favorite salad for a refreshing twist.

Notes

Best served chilled but can also be enjoyed at room temperature. This dressing can be made a day in advance; the flavors will deepen overnight. Store any leftovers in an airtight container in the refrigerator for about 5 to 7 days. For freezing, pour into ice cube trays and thaw in the refrigerator overnight.
