Preparation
- In a large pot, combine the chopped rhubarb, hulled and sliced strawberries, diced apples, sugar, and water or apple juice. Stir gently to combine.
Cooking
- Bring the mixture to a boil over medium heat, watching closely to prevent it from boiling over (about 5-7 minutes).
- Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the fruit is tender.
- Stir in the lemon juice and cinnamon (if using), mixing well.
Blending and Serving
- Use a potato masher or immersion blender to mash the mixture to your desired consistency, whether chunky or smooth.
- Allow the applesauce to cool before serving or storing.
Notes
Store in an airtight container in the refrigerator for up to 1 week. Can be frozen for up to 3 months.
