Ingredients
  

Fruits
  • 2 cups rhubarb, chopped Can be found in spring.
  • 2 cups strawberries, hulled and sliced Available at grocery stores or local farms.
  • 1 cup apples, peeled and diced Use your favorite variety.
Sweetener and Additions
  • 1/2 cup sugar (adjust to taste) Can substitute with honey or maple syrup.
  • 1 cup water or apple juice Room temperature can speed up cooking.
  • 1 teaspoon lemon juice Adds brightness to the flavor.
  • 1 teaspoon cinnamon (optional) For added warmth and flavor.

Method
 

Preparation
  1. In a large pot, combine the chopped rhubarb, hulled and sliced strawberries, diced apples, sugar, and water or apple juice. Stir gently to combine.
Cooking
  1. Bring the mixture to a boil over medium heat, watching closely to prevent it from boiling over (about 5-7 minutes).
  2. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the fruit is tender.
  3. Stir in the lemon juice and cinnamon (if using), mixing well.
Blending and Serving
  1. Use a potato masher or immersion blender to mash the mixture to your desired consistency, whether chunky or smooth.
  2. Allow the applesauce to cool before serving or storing.

Notes

Store in an airtight container in the refrigerator for up to 1 week. Can be frozen for up to 3 months.
