Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
- In a large bowl, combine the melted butter and brown sugar using a whisk or a wooden spoon until smooth.
- Stir in the egg and vanilla extract until well blended.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter-sugar mixture, mixing well after each addition.
- Gently fold in the lemon zest, chopped strawberries, and lemon juice until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before cutting into squares.
Notes
Serve warm or at room temperature. Pair with powdered sugar, whipped cream, or ice cream. Store in an airtight container at room temperature or refrigerate for longer storage.
