Ingredients
  

Cake Base
  • 1 box strawberry cake mix Look for one with real strawberry pieces if possible.
  • as per box instructions Ingredients listed on the box (usually eggs, oil, and water) Follow closely for a fluffy texture.
Add-ins
  • 1.5 cups chopped fresh or frozen strawberries Fresh is delightful, but frozen works great too.
  • 1 cup white chocolate chips or chunks Adds sweetness that pairs beautifully with strawberries.
  • 1 cup sweetened shredded coconut Gives a tropical flair to the cake.
  • 0.5 cup chopped pecans or walnuts (optional) A nutty crunch that complements the softness of the cake.
Cream Cheese Swirl
  • 8 oz cream cheese (softened) Don’t skimp on softening it for a smooth mix.
  • 0.5 cup unsalted butter (softened) Adds richness to the swirl.
  • 2.5 cups powdered sugar For just the right amount of sweetness.
  • 1 tsp vanilla extract Enhances the flavor and aroma.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
Layering
  1. Sprinkle the shredded coconut, chopped strawberries, and nuts evenly over the bottom of the prepared pan.
Make the Cake Batter
  1. Prepare the strawberry cake mix according to the box directions and pour the batter over the coconut and strawberries.
Make the Cream Cheese Swirl
  1. In a bowl, beat the cream cheese and butter until smooth, then mix in the powdered sugar and vanilla.
Add the Swirl & Chips
  1. Dollop the cream cheese mixture over the top of the cake batter, swirl it in with a knife, and sprinkle the white chocolate chips over the top.
Baking
  1. Bake for 40–45 minutes, or until the center is mostly set. Let it cool for at least 30 minutes before slicing.

Notes

Make sure your cream cheese and butter are at room temperature for a better blend. Store leftovers in an airtight container for up to 4 days.
