Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well blended.
- In another bowl, mix the melted butter with the egg, milk, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined, avoiding over-mixing.
- Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.
- In a separate bowl, beat the softened cream cheese until smooth.
Baking
- Fill each muffin cup halfway with batter, add a dollop of cream cheese into each, then cover with more muffin batter until the cups are about three-quarters full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean, and the tops are lightly golden.
- Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, allow butter and eggs to come to room temperature before mixing. You can substitute cream cheese with mascarpone for a different flavor.
