Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
Filling
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well blended.
  3. In another bowl, mix the melted butter with the egg, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, avoiding over-mixing.
  5. Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.
  6. In a separate bowl, beat the softened cream cheese until smooth.
Baking
  1. Fill each muffin cup halfway with batter, add a dollop of cream cheese into each, then cover with more muffin batter until the cups are about three-quarters full.
  2. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean, and the tops are lightly golden.
  3. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, allow butter and eggs to come to room temperature before mixing. You can substitute cream cheese with mascarpone for a different flavor.
