Ingredients
  

Cookie Base
  • 15.25 oz strawberry cake mix
  • 1 tsp baking powder
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 tsp pure vanilla extract
Add-ins
  • 1 cup white chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Line 2 large baking sheets with parchment paper.
  3. In a large bowl, combine the strawberry cake mix and baking powder.
  4. In a separate smaller bowl, whisk together the eggs, vegetable oil, and vanilla extract.
  5. Pour the egg mixture into the cake mix and stir until you form a dough.
  6. Gently mix in the white chocolate chips.
  7. Drop rounded balls of dough onto the prepared baking sheets.
Baking
  1. Bake for 9-10 minutes, keeping them slightly undercooked for a chewy texture.
  2. Allow the cookies to cool for at least 10 minutes before serving.

Notes

Store the cookies in an airtight container for up to 3 days or freeze them for later enjoyment. For added flavor, consider adding a pinch of salt, diced fresh strawberries, or replace white chocolate chips with dark chocolate chips or nuts.
