Fruit

  • 1 cup Strawberries Fresh or frozen, they add fruity sweetness and color.

Instructions

Step 1: Gather Your Ingredients

  • Collect all your ingredients: fresh strawberries, cream cheese, sugar, flour, baking powder, eggs, vanilla extract, and butter.

Step 2: Preheat the Oven

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

Step 3: Prepare the Cream Cheese Filling

  • In a bowl, mix cream cheese, sugar, and a splash of vanilla until smooth and creamy. Set aside.

Step 4: Make the Muffin Batter

  • In another bowl, whisk together flour, baking powder, and sugar. In a separate bowl, combine eggs, melted butter, and vanilla.

Step 5: Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Don’t overmix; a few lumps are okay!

Step 6: Fold in the Strawberries

  • Gently fold in chopped strawberries, making sure they’re evenly distributed throughout the batter.

Step 7: Fill the Muffin Tin

  • Fill each muffin liner about halfway with batter, then add a dollop of the cream cheese filling on top, followed by more batter to cover.

Step 8: Bake the Muffins

  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick comes out clean.

Step 9: Cool and Enjoy

  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Enjoy your delightful treats!
