Ingredients
  

Cake and Frosting
  • 1 box vanilla or chocolate cake mix prepared according to package
  • 1/2 cup frosting vanilla or flavor of choice
Coating and Decoration
  • 2 cups candy melts or white chocolate
  • 1 tbsp vegetable shortening or coconut oil
  • sprinkles for decoration
  • 24 lollipop sticks

Method
 

  1. Bake the cake according to the package instructions. Let it cool completely.
  2. Crumble the cooled cake into a large bowl. Add frosting a bit at a time and mix until it forms a dough-like consistency.
  3. Roll mixture into 1-inch balls and place on a parchment-lined tray. Freeze for 30 minutes.
  4. Melt candy melts with shortening in a microwave-safe bowl until smooth.
  5. Dip one end of each lollipop stick into the coating, then insert into cake balls. Dip each pop fully, tap off excess, and decorate with sprinkles.
  6. Stand cake pops upright in a foam block or box and let coating set completely. Enjoy!

Notes

Use pink candy melts for the classic Starbucks birthday cake look. Keep extras chilled for the best texture, and freeze undecorated cake balls for make-ahead ease.
