Ingredients
  

For the Puddings
  • 1 box 3.9 ounce box instant chocolate pudding
  • 2 cups whole milk
  • 1 box 3.9 ounce box instant vanilla pudding
  • 2 cups heavy cream
For Assembly
  • 1/2 teaspoon vanilla extract or mint extract
  • Green food coloring
  • 8 pieces Oreo cookies Crushed
  • 8 ounces whipped topping
  • 1 pack Airheads Xtremes Rainbow Candy
  • 8 pieces chocolate gold coins
  • Sprinkles
  • Oreo crumbs

Method
 

Preparation
  1. Add the chocolate pudding mix and milk to a medium mixing bowl and beat for 2 minutes. Refrigerate for 5 minutes to set.
  2. In a separate bowl, combine the vanilla pudding mix and heavy cream; mix on low speed, then increase to medium until light and fluffy. Beat in vanilla extract and green food coloring.
Assembly
  1. In clear glasses or small jars, layer chocolate pudding, green whipped pudding, crumbled Oreos, and whipped topping. Repeat layers.
  2. Decorate with half an Airhead, a chocolate coin, sprinkles, and Oreo crumbs.
Serving
  1. Serve these parfaits in clear cups or jars to showcase the beautiful layers.
  2. Place them on a shiny green tablecloth to enhance the festive feel.

Notes

Store leftovers in the fridge for up to 2 days, covered with plastic wrap. Add toppings just before serving to maintain their crunchiness. For a stronger mint flavor, use mint extract instead of vanilla. Feel free to get creative with the toppings – use your favorite candies or add some fresh fruit for a pop of color.
