- Grate the yellow squash, then place it in a clean towel and squeeze out as much water as possible.
- In a bowl, mix together the squash, chopped onion, egg, flour, cornmeal, salt, and pepper until evenly combined.
- Heat oil in a skillet over medium heat. Scoop spoonfuls of the mixture into the skillet and flatten gently.
- Cook for about 3–4 minutes per side, until golden brown and crispy. Drain on paper towels.
Notes
These squash patties are great for meal prep and can be enjoyed hot or cold. Try adding herbs or cheese for variation. For a lighter option, bake at 400°F for 20 minutes, flipping halfway.
