Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts thick enough to stuff
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning
Filling
  • 3 cups fresh spinach lightly sautéed
  • 4 oz cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic minced

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet. Add garlic and sauté until fragrant. Add spinach and cook until wilted. Remove from heat and stir in cream cheese, mozzarella, and parmesan until combined.
  3. Cut a pocket into each chicken breast, being careful not to cut all the way through. Season outside with salt, pepper, paprika, and Italian seasoning.
  4. Stuff each chicken breast with the spinach mixture. Secure with toothpicks if necessary.
  5. In an oven-safe skillet, heat olive oil and sear the chicken breasts 3-4 minutes per side until golden.
  6. Transfer skillet to the oven and bake for 15-20 minutes, or until chicken is cooked through (165°F internal temperature).

Notes

For added flavor, mix sun-dried tomatoes into the filling or swap mozzarella for feta. Always use a meat thermometer to ensure chicken reaches 165°F.
