Preparation
- Preheat the oven to 400°F (200°C).
- Pat the chicken dry with a paper towel.
- Make a horizontal slit in the thickest part of each chicken breast to create a pocket, but do not cut all the way through.
Seasoning
- In a small bowl, mix together the paprika, oregano, garlic powder, onion powder, salt, and pepper.
- Season the chicken breasts with the spice mix, rubbing it on both sides.
Filling
- In another bowl, combine the spinach, feta cheese, ricotta cheese, scallions, garlic, and dill.
- Stuff this mixture evenly inside the chicken breasts and close the pockets with toothpicks.
Cooking
- Heat a large oven-safe skillet over medium-high heat and add olive oil.
- Sear the stuffed chicken until golden brown, about 3-4 minutes on each side.
- Transfer the skillet to the oven and bake uncovered for 15-18 minutes, until the chicken is cooked through.
- If needed, broil for an additional 1-2 minutes to brown the skin.
Notes
Leftovers can be stored in the fridge for up to 4 days and reheated in the oven at 350°F (180°C) to maintain moisture. Feel free to experiment with different herbs or cheese varieties.
