Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
Sauté chopped spinach in a skillet with a touch of oil until wilted. Cool slightly.
Mix spinach with cream cheese, sour cream, garlic, salt, pepper, and red pepper flakes until smooth.
On the baking sheet, place tablespoon-sized mounds of shredded cheese and flatten slightly.
Add a small spoonful of the spinach dip mixture to the center of each cheese mound and press gently.
Bake for 15–18 minutes, until edges are golden and crispy. Let cool on the tray for 5 minutes before serving.
Notes
Dry spinach thoroughly to avoid soggy centers. Use parchment or a silicone mat to prevent sticking. Try adding artichokes or bacon for variety!
