Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- Sauté chopped spinach in a skillet with a touch of oil until wilted. Cool slightly.
- Mix spinach with cream cheese, sour cream, garlic, salt, pepper, and red pepper flakes until smooth.
- On the baking sheet, place tablespoon-sized mounds of shredded cheese and flatten slightly.
- Add a small spoonful of the spinach dip mixture to the center of each cheese mound and press gently.
- Bake for 15–18 minutes, until edges are golden and crispy. Let cool on the tray for 5 minutes before serving.
Notes
Dry spinach thoroughly to avoid soggy centers. Use parchment or a silicone mat to prevent sticking. Try adding artichokes or bacon for variety!
