  • 2 cups sushi rice (uncooked)
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
For the Salmon Mixture
  • 1 lb fresh salmon fillet (skinless and diced)
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce (or to taste)
  • 1 teaspoon sesame oil
  • 1/2 cup green onions (chopped, plus extra for garnish)
  • 1 sheet nori (cut into small strips) For garnish

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 375°F (190°C) to get it warmed up while you prepare the dish.
  2. Cook the Rice: Begin cooking the sushi rice according to package instructions, typically rinsing it under cold water before placing it in a rice cooker or pot with the 2.5 cups of water. Cook until tender, about 20 minutes.
  3. Prepare the Vinegar Mixture: In a separate mixing bowl, combine rice vinegar, sugar, and salt. Stir until dissolved.
  4. Fluff the Rice: Once the rice has cooked, fluff it with a fork and gently fold in the vinegar mixture.
  5. Spread the Rice: Evenly spread the seasoned rice at the bottom of a baking dish and allow it to cool slightly.
  6. Make the Salmon Mix: In another mixing bowl, combine the diced salmon, mayonnaise, Sriracha sauce, sesame oil, and chopped green onions. Stir until well blended.
Assembly and Cooking
  1. Layer the Dish: Spread the salmon mixture evenly over the rice base in the baking dish.
  2. Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, until the salmon is cooked through and the top is golden.
  3. Garnish and Serve: Once baked, let cool for a few minutes and garnish with green onions, nori strips, and tobiko if desired. Serve warm.

Notes

This dish is great for gatherings, is easily customizable, and makes delicious leftovers. Adjust the spice with Sriracha based on your preference. Serve it with soy sauce or pickled ginger for an enhanced experience.
