  • 2 tablespoons chili paste Adjust to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
Proteins and Vegetables
  • 1 pound thinly sliced beef, chicken, or tofu Choose your preferred protein
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 cup carrots, thinly sliced
  • 1 cup bean sprouts
Noodles and Garnish
  • 1 package rice noodles Cook according to package instructions
  • Chopped green onions for garnish
Dipping Sauces
  • Dipping sauces (like soy sauce or chili oil) For serving

Method
 

Preparation
  1. In a large pot, bring the chicken or vegetable broth to a boil over medium heat.
  2. Stir in the chili paste, soy sauce, and sesame oil. Mix well.
  3. Add the sliced meat or tofu to the pot. Cook for about 5 minutes until fully cooked.
  4. Add the sliced mushrooms, bok choy, carrots, and bean sprouts. Let it cook for another 3-4 minutes.
  5. In a separate pot, cook the rice noodles according to the package instructions. Drain and set aside.
  6. Serve the hot pot with the rice noodles and garnished with chopped green onions.
Serving
  1. Spicy hot pot is best served hot and fresh. Place the pot in the center of the table for everyone to enjoy with bowls of rice noodles and dipping sauces on the side.

Notes

Use a mix of proteins and vegetables to keep it interesting. Make the broth ahead of time and let it cool for flavors to blend. Adjust the spiciness by varying the amount of chili paste.
