Preparation
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Dry the chicken wings thoroughly with paper towels.
- In a small bowl, combine melted butter, sesame oil, garlic powder, salt, black pepper, and cayenne pepper. Pour this mixture over the wings and toss to coat them well.
Baking
- Spread the wings in a single layer on the baking sheet and bake for 50-55 minutes, flipping them halfway through for even cooking.
Sauce Preparation
- While the wings are baking, prepare the sauce. Melt 4 tablespoons of butter in a small pot over medium heat.
- Add the crushed red pepper and grated ginger; cook for a minute.
- Mix in the honey, Sriracha, soy sauce, lime juice, and rice wine vinegar. Bring this mixture to a light boil, then stir in cornstarch and cook until it thickens, about 30 seconds.
Finishing Touch
- Once the wings are baked, remove them from the oven and increase the oven temperature to broil.
- Transfer the wings to a heatproof bowl, pour the sauce over them, and toss to coat.
- Drain any excess oil from the baking sheet, return the wings to the sheet, and broil for 4-5 minutes.
- Remove from the oven, garnish with sesame seeds and cilantro, and drizzle with more honey if desired. Serve with lime wedges.
Notes
Make sure to dry the chicken wings well before baking to help them get crispy. You can adjust the spice level by adding more or less cayenne pepper and Sriracha. For extra flavor, consider marinating the wings in the butter mixture for a few hours or overnight before baking. Don’t skip the broiling step for crispy texture.
