  • 1 cup granulated sugar See note to reduce the sugar
  • 1/2 cup oil See note for substitution
  • 2 pieces eggs
  • 1 cup mashed ripe bananas (about 3 ripe bananas)
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
Dry Ingredients
  • 1 1/2 cups all-purpose flour See note for substitution
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350 degrees F.
  2. Grease and flour a 9X5-inch loaf pan (or several mini loaf pans).
  3. In a large bowl, whisk together the sugar and oil.
  4. Add the eggs, bananas, sour cream, and vanilla; blend well.
  5. Add the flour, baking soda, and salt; stir just until dry ingredients are moistened.
  6. Spread the batter evenly in the prepared pan.
Baking
  1. Bake for 50-60 minutes until a toothpick inserted in the center of the loaf comes out clean.
  2. Cool for five minutes in the pan. Gently turn out onto a cooling rack and cool completely.

Notes

Store covered at room temperature for up to three days or freeze tightly wrapped in plastic and aluminum foil for up to three months. It can be enjoyed warm or at room temperature, plain or with butter, cream cheese, or cinnamon sugar.
