Preparation
- Wash and peel (if desired) the potatoes, then slice them evenly to about 1/4-inch thick.
- Heat butter in a large skillet over medium heat.
- Add onions and sauté until translucent, about 5 minutes.
- Add sliced potatoes to the skillet, arranging them in a single layer if possible.
Cooking
- Cook the potatoes undisturbed for a few minutes to develop a golden crust, then gently flip them.
- Reduce heat to low, add broth or water, and season with salt, pepper, and optional spices.
- Cover tightly and let cook for 15-20 minutes, checking occasionally until the potatoes are fork-tender.
Notes
