Preparation
- Boil the Baby Potatoes in salted water until they’re fork-tender, about 15-20 minutes.
- Drain your potatoes and let them cool slightly.
- Preheat your oven to 425°F (220°C).
Smashing & Seasoning
- Place the boiled potatoes on a baking sheet lined with parchment paper, and gently smash each one with a fork.
- Drizzle with olive oil and sprinkle generously with salt and pepper.
- Top each potato with garlic and herb butter.
Roasting
- Roast the potatoes in the oven for about 20-25 minutes until they’re golden brown and crispy, flipping halfway.
Notes
Use a fork for smashing to create more texture. Avoid overcrowding the baking sheet for optimal crispiness.
