  • 1 lb Baby Potatoes Look for small, uniform potatoes.
  • 3 cloves Garlic, minced Fresh garlic adds depth.
  • 1/2 cup Herb Butter Can be homemade or store-bought.
  • to taste Salt Sea salt recommended for extra crunch.
  • to taste Pepper Fresh cracked for added warmth.
  • 3 tbsp Olive Oil For achieving a crispy exterior.

Method
 

Preparation
  1. Boil the Baby Potatoes in salted water until they’re fork-tender, about 15-20 minutes.
  2. Drain your potatoes and let them cool slightly.
  3. Preheat your oven to 425°F (220°C).
Smashing & Seasoning
  1. Place the boiled potatoes on a baking sheet lined with parchment paper, and gently smash each one with a fork.
  2. Drizzle with olive oil and sprinkle generously with salt and pepper.
  3. Top each potato with garlic and herb butter.
Roasting
  1. Roast the potatoes in the oven for about 20-25 minutes until they’re golden brown and crispy, flipping halfway.

Notes

Use a fork for smashing to create more texture. Avoid overcrowding the baking sheet for optimal crispiness.
