Ingredients
  

For the Burger Sauce
  • 1/2 cup mayo This is the base for the sauce.
  • 1/4 cup ketchup Adds sweetness and tang.
  • 1 tablespoon finely chopped dill pickles Gives crunch and flavor.
  • 1/2 teaspoon pickle juice Enhances the tangy flavor.
  • 1/4 teaspoon paprika For color and mild flavor.
  • 1/2 teaspoon garlic powder Adds a savory note.
  • 1/4 teaspoon kosher salt To taste.
  • 1/8 teaspoon ground black pepper To taste.
  • 1/2 teaspoon soy sauce For umami flavor.
  • 1/2 teaspoon rice vinegar Adds acidity.
For the Smash Burgers
  • 1 pound ground beef (80/20) Juicy fat content.
  • 3/4 teaspoon kosher salt For seasoning the beef.
  • 1/4 teaspoon ground black pepper For seasoning the beef.
  • 6 slices American cheese Melts perfectly on the burgers.
  • 6 pieces flour tortillas (street taco size) Wraps for the burgers.
  • to taste shredded lettuce For topping.
  • to taste burger pickles For topping.
  • optional other toppings: bacon, white onions, burger press, burger patty paper squares Customize as desired.

Method
 

Preparing the Sauce
  1. In a small bowl, mix the burger sauce ingredients together and set aside.
Preparing the Patties
  1. In another bowl, combine the ground beef, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Mix well and divide into 6 equal-sized balls.
  2. Prepare your tortillas, cheese, and other toppings to have everything ready since cooking goes quickly.
Cooking
  1. Preheat a flat top griddle to medium-high heat. Place the beef balls on the griddle. Using a burger press, press down on each ball for about 15-20 seconds to flatten them as much as possible.
  2. Let the patties cook for about 40 seconds. You can season them now if you want.
  3. Flip the patties and add a slice of cheese on each one. At the same time, place the tortillas on the griddle. Close the lid and let everything cook for about 2 minutes.
  4. Open the lid, flip the tortillas, and use a spatula to lift the patties onto the toasted tortillas. Transfer to a plate.
Serving
  1. Top with shredded lettuce, burger sauce, and pickles. You can also add bacon and thin white onion if desired. Enjoy!

Notes

Make sure your griddle is hot enough before cooking to get a nice sear on the patties. Use a burger press for even patties and better cooking. Customize your toppings to suit your taste.
