Ingredients
  

For the Sauce
  • 1/2 cup mayo
  • 1/4 cup ketchup
  • 1 tablespoon finely chopped dill pickles
  • 1/2 teaspoon pickle juice
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon rice vinegar
For the Tacos
  • 1 pound ground beef (80/20) Use higher fat content for juiciness.
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 6 slices American cheese
  • 6 pieces flour tortillas (street taco size) Corn tortillas can be used as an alternative.
  • to taste shredded lettuce
  • to taste burger pickles
  • optional Other toppings: bacon, white onions, burger press, burger patty paper squares Customize to your liking.

Method
 

Preparation
  1. In a small bowl, add the sauce ingredients (mayo, ketchup, dill pickles, pickle juice, paprika, garlic powder, kosher salt, black pepper, soy sauce, and rice vinegar). Stir to combine and set aside.
  2. In another bowl, add ground beef, salt, and pepper. Mix gently to combine, then divide it into 6 equal balls. Set aside.
  3. Prepare your tortillas, cheese, and toppings (shredded lettuce and burger pickles) before you start cooking.
Cooking
  1. Preheat your flat top griddle to medium-high heat.
  2. Place the meatballs on the griddle and use a burger press to flatten each ball, pressing down for about 15-20 seconds.
  3. Let them cook for about 40 seconds, then flip each patty and add a slice of cheese on top.
  4. At the same time, place the tortillas on the griddle, close the lid, and cook for about 2 minutes.
  5. Open the lid, flip the tortillas, and use a spatula to lift the patties and place them on top of the toasted tortillas.
Assembly
  1. Top each taco with shredded lettuce, burger sauce, and pickles. Add bacon and thin slices of white onion if desired.

Notes

If you have leftovers, let the tacos cool and then store them in an airtight container in the fridge for 2-3 days. To reheat, use a skillet or microwave until warmed through.
