Ingredients
  

Burger Sauce
  • 1/2 cup mayo
  • 1/4 cup ketchup
  • 1 tablespoon finely chopped dill pickles
  • 1/2 teaspoon pickle juice
  • 1/4 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon rice vinegar
Burger Base
  • 1 pound ground beef (80/20)
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
Assembly
  • 6 slices American cheese
  • 6 pieces flour tortillas (street taco size)
  • Shredded lettuce
  • Burger pickles
  • Optional toppings: bacon, white onions, burger press, burger patty paper squares

Method
 

Preparation
  1. In a small bowl, mix together the Burger Sauce ingredients: mayo, ketchup, dill pickles, pickle juice, paprika, garlic powder, kosher salt, black pepper, soy sauce, and rice vinegar. Stir to combine and set aside.
  2. In another bowl, add the ground beef, salt, and pepper. Mix them together gently. Divide the beef into 6 equal balls and set them aside.
  3. Make sure you have your tortillas, cheese, and other toppings ready. Prepping is key, as the cooking process goes very fast!
Cooking
  1. Preheat your flat top griddle to medium-high heat. Place the beef balls on the griddle. Use a burger press to flatten each ball until they are super thin, taking about 15-20 seconds for each patty.
  2. Let the patties cook for about 40 seconds before flipping them.
  3. Immediately place a slice of cheese on each patty while putting the tortillas on the cooktop. Close the lid and let the burgers cook for about 2 minutes.
  4. Open the lid and flip the tortillas. Use a spatula to lift the patties and place them on top of the toasted tortillas.
  5. Transfer everything to a plate.
Serving
  1. Top your tacos with shredded lettuce, burger sauce, and pickles. Add bacon and thin white onion if desired. Enjoy your Smash Burger Tacos!

Notes

Prepping your ingredients in advance makes cooking much easier and faster. Experiment with different toppings to customize your tacos to your taste. Make sure not to overmix the ground beef to keep the burgers juicy.
