- Prepare toppings: shred lettuce, dice tomatoes, and slice pickles. Set aside cheese and burger sauce.
- Heat a skillet over medium-high. Place a small ball of ground beef on a tortilla, season with salt and pepper, and press thin using a spatula or burger press.
- Place beef-side down in the skillet and cook until beef is browned and edges are crispy, about 2-3 minutes.
- Flip to crisp the tortilla side, top with cheddar cheese, and let melt while cooking another 1-2 minutes.
- Remove from skillet and top with shredded lettuce, tomatoes, pickles, and burger sauce.
- Fold in half and serve immediately. Repeat for remaining tacos.
Notes
Tips: use a burger press for thinner beef, and warm tortillas before smashing. Customize with different cheeses or spicy sauces. Store toppings and cooked beef separately for best reheating results.
