Smash Burger Patties

Delicious, crispy-edged smash burgers made with high-fat ground beef, customizable toppings, and toasted brioche buns.

Ingredients
  

Patties
  • 1.5 lbs ground beef, 80/20, divided into 8 portions (3oz each) Use meat that has a higher fat content for juicier burgers.
  • to taste Salt
  • to taste Black Pepper
  • optional Garlic powder
  • 4 slices medium cheddar cheese Add to half of the patties.
Sauce and Toppings
  • 1/3 cup mayonnaise
  • 1 tsp yellow mustard
  • 4 pieces burger buns, brioche preferred Butter and toast on the griddle.
  • 2 cups iceberg lettuce, shredded
  • 1 large tomato, sliced
  • 1/2 medium red onion, sliced into thin rings
  • 2 pieces dill pickles, cut into 12 slices

Method
 

Preparation
  1. Divide beef into 8 even portions, shaping each into a loose ball. Refrigerate while preparing ingredients.
  2. Shred lettuce, slice tomatoes, onions, and pickles. Butter and toast buns on a medium heat griddle until golden.
Cooking
  1. Heat griddle to medium/high. Place 2-4 burger balls on the griddle, cover with parchment, and smash down into patties.
  2. Season with salt, pepper, and optional garlic powder.
  3. Cook for 2 minutes, flip, and cook for another minute.
  4. Add cheese to half of the patties and cover with the second patty.
Assembly
  1. Spread sauce on the bottom bun, layer with pickles, lettuce, tomato, onion, and the double patty.
  2. Top with the other half of the bun.

Notes

Serve hot off the griddle with crispy fries, onion rings, or a simple salad. Add your favorite sauces like ketchup or extra mayo. Leftovers can be stored in an airtight container in the fridge for 2-3 days. Reheat on a skillet before serving.
