Preparation
  1. In a slow cooker, combine the crushed pineapple, soy sauce, brown sugar, garlic, ginger, and black pepper. Stir well until all ingredients are thoroughly mixed, about 2-3 minutes.
  2. Add the pork shoulder to the slow cooker, ensuring it’s well-coated in the sauce. Try to immerse it as much as possible, then cover it with a lid.
Cooking
  1. Cover and cook on low for 6-8 hours until the pork is so tender that it pulls apart easily with a fork, achieving a rich, caramelized color.
  2. Once cooked, fluff some rice on your plates and top with the pork. Drizzle a bit of the cooking sauce over the top.

Notes

To enhance flavors, consider marinating the pork overnight in the sauce, and add a splash of rice vinegar or lime juice before serving for brightness. Pair with a side salad or steamed vegetables.
