Ingredients
  

For the Chicken and Sauce
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 pieces lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
For Serving
  • 2 cups cooked fluffy rice
  • to taste Fresh parsley (for garnish)

Method
 

Preparation
  1. In a slow cooker, combine the chicken broth, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and coat them with the sauce.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  2. Once done, shred the chicken in the slow cooker and mix it with the sauce.
Serving
  1. Serve the chicken over fluffy cooked rice and garnish with fresh parsley.

Notes

Make sure to season the chicken well with salt and pepper for better flavor. For a thicker sauce, mix the sauce with cornstarch and cook on high for a few minutes. Adjust lemon amount to taste. Customize by adding vegetables or switching rice with quinoa or cauliflower rice.
