- In a slow cooker, combine the chicken broth, lemon juice, lemon zest, olive oil, garlic, oregano, thyme, salt, and pepper.

- Once done, shred the chicken in the slow cooker and mix it with the sauce.
Serving
- Serve the chicken over fluffy cooked rice and garnish with fresh parsley.
Notes
Make sure to season the chicken well with salt and pepper for better flavor. For a thicker sauce, mix the sauce with cornstarch and cook on high for a few minutes. Adjust lemon amount to taste. Customize by adding vegetables or switching rice with quinoa or cauliflower rice.
